Where does your winter salad come from?
Fun fact: If you eat a salad somewhere in the United States in February, there’s a 90+% chance that it came from Yuma, Arizona. Blessed with tons of sunshine and plenty of Colorado River water (and very old water rights), Yuma boasts 50,000 acres of romaine lettuce alone. Last October, I pilgrimaged to this remote southwestern Arizona town to partake in its delights for a fun travel assignment.
